Can I install any software i want in a home server?

I need to have PS3MEDIASERVER, SQUEEZEBOXCENTER AND UTORRENT on a pc 24/7.Also sharing files. I want a nas or a server for this, so I can turn off my pc. My question is, if i build a server with ubuntu server or windows sever, can i run any software i want ( and keep it on) just as i can do in xp and vista?
